Vegetable Lasagne

This delicious vegetarian lasagne dish is perfect for dinner with family and friends. In this recipe, Jamie Oliver uses aubergine, mushrooms, and courgettes to create a delicious and hearty lasagne. To make this dish, you'll need:
- 2 Aubergines
- 200g Mushrooms
- 2 Courgettes
- 1 White Onion
- 2 cloves of Garlic
- 500g Passata
- 50g grated Parmesan
- Lasagne sheets
Start by preheating your oven to 200C/180C fan/gas 6. Slice the aubergines, mushrooms and courgettes into thin slices and put them in a roasting tin. Peel and finely chop the onion and garlic, then add to the tin. Drizzle over 1 tablespoon of olive oil and season with sea salt and black pepper. Roast in the oven for 25 minutes, stirring halfway through.
Meanwhile, heat 1 tablespoon of olive oil in a pan. Add the passata and simmer for 10 minutes. Once the vegetables are cooked, add them to the passata and stir together. Simmer for a further 10 minutes.
To assemble the lasagne, spoon a layer of the vegetable mixture into an ovenproof dish. Top with a layer of lasagne sheets, then repeat the process until the dish is full. Sprinkle over the Parmesan and bake in the oven for 30 minutes. Serve with a green salad.
